Hakurei Turnip Salad with Orange and Fennel

When you find Hakurei turnips, the first thing you should do with them is eat them raw. They are delicious with orange and fennel, but you can add them to any green salad or simply enjoy them on their own.

Hakurei turnips, scrubbed clean and peeled only if you want
1 orange
1 blood orange
1 fennel bulb
Optional: baby arugula or baby spinach
Citrus Vinaigrette (recipe here)

Thinly slice a few turnips on a mandoline or with a knife; set aside. Knife-peel the oranges and cut supremes from their membrane, or just cut into segments; set aside. Thinly slice the fennel bulb using a mandoline or knife and set aside with some of the fronds. Toss or compose the salad on a plate then drizzle with Citrus Vinaigrette.
