1 cup kumquat slices (about 12 kumquats)
1 cup water
½ cup granulated sugar
Wash kumquats and slice each crosswise into thirds, removing the seeds that are easy to get. Bring the water and sugar to boil in a small, heavy-bott omed saucepan. Add the sliced kumquats and simmer until the fruit is translucent and tender, about 15 minutes. Cool, transfer to a glass jar, and keep refrigerated.
