Raw Carrot Cashew Soup

If you are looking for a quick but nutrientpacked meal, this is one of our family’s favorites. It takes only a few minutes to put everything into a blender and is a meal with minimal cleanup. You can use this method with any of your favorite vegetable combinations. It can be heated up on the stove, blended until hot, or enjoyed as a cold soup.

SERVES 4

4 large carrots, peeled and cut into chunks
1-inch chunk of jalapeño (optional for a slight spice)
¼ cup raw cashews
16 ounces coconut milk, light or regular
3 tablespoons freshly squeezed lemon juice
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon salt
¼ teaspoon ground ginger
Garnish: pumpkin seeds and parsley leaves

Add all ingredients into a high-speed blender (we love Vitamix or Blendtec) and blend on high until smooth. Garnish with pumpkin seeds and parsley leaves.
