Conservation Grains’ Last Best Pancake Flour

Miller extraordinaire Judy Cornell brings together this thoughtful blend of wheat, malted durum, rye, and buckwheat which makes the best pancakes. Follow the simple recipe on the back of the bag, adding an egg if you’ve got one, an enhancement we worked out with Judy. Get the batter mixed then let it stand for 15 minutes (or more) before cooking. This hydrates the fl our and helps the batter hold pancake-y shapes on the griddle. Vermont Maple Syrup from Sacred Abundance

Elizabeth Henrichs is our local connection to Vermont’s most delicious industry: maple syrup. Each spring she travels out to her in-laws’ to help with the sugaring at Goodyear’s Sugarhouse and she brings back a variety of different grades of pure maple syrup. Mountain Moon Wax Candle

There’s something special about meeting a maker, which I was able to do during the Biome Slow Craft’s monthly Art Market, where I met Lauren Phillips of Mountain Moon Wax. Lauren’s candles are made with soy wax and cotton wicks, and are housed in hand-poured concrete vessels, mini tins, and American-made glass. The coolest part: She offers candle refills. Vienne’s Canelé

Most glorious one hour out of the oven, the canelé has a crisp exterior and a soft, almost custardy interior flavored with rum. They hail from Bordeaux, France, and local pastry chef Anna Mendoza gets up early to line the individual copper molds with beeswax and put a batch in the oven almost every day. Their delightfully crisp shell begins to soften after a few hours out of the oven, but fear not: You can revive them in a 450°F oven for 5 minutes then let them cool, which will re-harden the shell.
