Edible Bozeman

Satisfying, savory, and super easy to pull together—that’s what’s on the agenda for winter get-togethers, especially ones centered on watching sports and rooting for teams. These game-day goodies take center court on a table filled with shareable treats. This bean-free chili might help you win the cook-off. Go, team!

SERVES 4

1 pound ground beef
1 teaspoon ground cumin
1–2 teaspoons ground chili or cayenne pepper (depending on heat preference)
1 teaspoon ground mustard
½ teaspoon sweet smoked paprika
1 yellow or Vidalia onion, chopped
3 cloves garlic, chopped fine
1 red bell pepper, chopped
1 green or yellow bell pepper, chopped
1 carrot, chopped
4–5 mini portobello mushrooms, stems removed and chopped
1 (14-ounce) can crushed tomatoes
2 cups bone broth (beef or mushroom broth also work)
Salt to taste
Pepper to taste

Heat a Dutch oven over medium-high until hot to the touch. Brown ground beef until cooked through. Drain fat from the pan if desired—using lean ground meat (90/10) will eliminate this step. Lower the heat to medium and add cumin, ground chili or cayenne pepper, mustard, and paprika to the meat and stir until the meat is coated.

Add onion, garlic, peppers, and carrot to the beef. Cook until onion is translucent, about 5 minutes. Then add mushrooms, crushed tomatoes, and broth. Stir to combine. Add salt and pepper.

Let the mixture come to a boil, then reduce heat to allow chili to simmer for 30 minutes to 2 hours. The longer it cooks, the more flavorful it will be.

Garnish with chopped white onion and cilantro, avocado, shredded cheese, and/or corn chips.
