Even the best bread loaf is better with butter. So is it surprising that butter can be better with a few fresh herbs and some sea salt? Lettuce leaves, with tasty add-ins and a citrus dressing, can become an elevated treat, making it easy to increase your fiber intake. And mint chutney dresses up more than just a lettuce cup: Try it on lamb roast or some grilled goat lollies (recipe in Edible Bozeman’s Summer 2024 issue, available online). And as for chimichurri, it’s a zesty summer staple that wakes up chicken, steak, burgers, and fish.

MAKES ABOUT 1 CUP

½ cup parsley, finely chopped
½ cup cilantro, finely chopped
1 teaspoon fresh oregano, finely chopped
1 small shallot, minced
3–4 medium garlic cloves, minced
½ cup extra virgin olive oil
1 tablespoon fresh lemon juice
½ teaspoon sea salt
½ teaspoon crushed red pepper flakes

Combine parsley, cilantro, oregano, shallot, and garlic in a small bowl. Stir in olive oil and lemon juice. Mix in salt and red pepper flakes. Store in an airtight container in the refrigerator for up to 2 weeks.
