Edible Bozeman

Applesauce made with grated apples, lemonade, and a touch of cane sugar is a simple, fresh accompaniment that pairs especially well with pork or chicken. We’ve also been caught topping a piece of brown bread toast with cottage cheese and a dollop of fresh applesauce for a quick snack or light breakfast.

Combinations of Honeycrisp, Gala, Fuji, Granny Smith, Sweet 16s, and Harrelson apples make great sauce. Choose your favorites and be sure to use ripe, firm, and unblemished apples for the best results.

SERVES 4–6

6 medium-sized apples (mix and match green and red varieties)
½ cup lemonade
1½ tablespoons cane sugar
1 teaspoon vanilla extract

Wash and grate apples (leave the skin on) using a large box grater. Stir together all the ingredients in a heavy-bottomed saucepan, and simmer on medium heat until the apples soften, approximately 15 minutes. Use an immersion blender to blend apple mixture to desired consistency.

Enjoy warm or cool completely and store in an airtight container in the refrigerator for up to 3 days. Applesauce can be canned using a water-bath or pressure-canning method and stored on the shelf for up to 6 months.
